July 15, 2011 – In a city known for its cuisine, it takes more than a mouth-watering menu to make your mark. This lesson wasn’t lost on Denis Lefebvre, creator and manager of NÜVÜ Bistro-Expériences, one of the newest jewels in Montréal’s gleaming gastronomy scene. Feeding the twin cravings for fine dining and stunning visual art, NÜVÜ has created a niche for itself in the pulsing heart of the city’s Gay Village.
The enchantment of NÜVÜ is due in no small part to the bistro’s stunning sense of style, which begins with sleek architectural design by Humà and includes staff smartly dressed by acclaimed Montréal designer Philippe Dubuc. During the day, the visual focus is on the dazzling paintings of Dominic Besner, while evening hours feature a fluid design concept that sees the bistro transform into a completely different atmosphere every night of the week. Designed by Moment Factory, each night’s unique theme is brought to life through large-scale projections that adorn the walls of the restaurant, matching décor and creative lighting.
But don’t think for a minute that NÜVÜ allows dazzling design to outshine delectable dining. Trained in France and Switzerland, Executive Chef Bernard L'Hôte brings more than a dash of Montréal flair to a Mediterranean-inspired French menu. Skilfully balancing flavours while ensuring artistic appeal, a variety of creative fish, meat and vegetarian dishes keep step with the rhythm of the seasons.
With a different theme each day of the week, NÜVÜ always has something to offer—regardless of your budget. The terrace is ideal for happy hour drinks, there’s an eclectic weekend brunch, and a late-night menu (10 p.m. to 1 a.m.) is always available. The experience is as accessible as it is unique.
