November 24, 2009 – What is delectably sweet, goes down smoothly and is absolutely Québécois?  While maple syrup might be on the tip of your tongue, wait just a moment and allow a taste of ice cider from La Face Cachée de la Pomme cidery to cross your lips. From the rigours of our harsh Québécois winter has come a veritable local treasure. Known as ice cider or apple ice wine, it is a perfect aperitif or accompaniment to cheese, foie gras or dessert. Furthermore, it makes for an ideal gift (especially for yourself!).

Inspired by ice wine fabrication and our unique climate, La Face Cachée de la Pomme’s ice cider is garnering international acclaim, with over 60 different distinctions to their credit.

The severe cold is the key to the cider’s sweetness: once frozen, the sugar concentration of the apple is greatly elevated, a necessary state in order to produce the sweet elixir. La Face Cachée de la Pomme uses two natural processes that they contributed to develop—cryoconcentration and cryoextraction – and is currently seeking a reserved designation for Québec apple ice wines.
