Published on October 1st, 2009 - Crudessence. While the name may not be familiar, the concept is: Respect for all living things, or “a healthy body in a clean environment and a strong, sustainable ecosystem.” You get the gist. And now you can taste all the goodness when you visit this new restaurant/boutique/cooking school/caterer.

The cornerstone of this new concept is conscious eating and the mantra is vegan. No animal products are used in the ingredients that make up the house’s dishes. Cow’s milk has been replaced by smooth nut milk, egg texture by flax, meat by sprouted pâtés and cheese by seed fermentation.

Of course, all vegetables are organic (the company has been certified organic by Québec Vrai), are pesticide- and radiation-free, and come from neighbouring farms, to support the local economy.

The result? Delicious dishes bursting with colour that leave you fabulously rejuvenated. Their à la carte buffets turn time-worn meeting lunches into mouth-watering experiences, lunch boxes become a satisfying way to savour country freshness and the restaurant has a relaxed family feel: a healthy and happy oasis where kids will want to eat their vegetables!

Crudessence’s extra attention to detail, and the earth, is apparent everywhere. Even their boxes are made from cornstarch, potato starch or cane sugar, and can be recycled or thrown into your compost barrel.

The cooking classes are a veritable culinary adventure that make eating well accessible, and nourish your mind as well as your body.
