Sit in on sessions from returning chefs such as Patrice Demers from Patrice Pâtissier, Gita Seaton from Nouveau Palais and the wonderful FoodLab duo Michelle Marek and Seth Gabrielse. This year’s event will also see the return of prodigal son Hugue Dufour, who has roamed the kitchens of Toqué and Au Pied de Cochon and is now helming M. Wells Dinette and M. Wells Steakhouse in New York. Also new to Omnivore this year are Jeffrey Finkelstein from Hof Kelsten, Christopher Parasiuk and Elisabeth Cardin from Restaurant Manitoba, and Ivan Shishkin from Delicatessen Moscou.
